Jodi's Three-Bean Salad

 

Every restaurant salad bar has a three-bean salad, as do most potlucks. “And I usually give them a try,” says Denny Baxter, “But if it's not yours, Jodi, I've just wasted the space on my plate.”

So, give Jodi's version a try and see if your serving bowl isn't empty by the end of your next picnic or church potluck.

1 can cut green beans
1 can wax beans
1 can kidney beans
1 medium onions, chopped
3/4 cup sugar
2/3 cup cider vinegar
1/3 cup corn oil
1 tsp. salt
1 tsp. pepper

Double the ingredients if you are taking it to a potluck or picnic.

Drain the beans, then combine all the ingredients, stirring enough to distribute ingredients evenly. Chill overnight.

Toss again before serving with a slotted spoon.
